About the Dish:

This is not an elaborate tallow making recipe!

As much as I adore those of you who render your own beef tallow, and I soon wish to take on this endeavor myself, this is:

A QUICK EASY WAY TO GET SOME TALLOW FROM YOUR LEFTOVER BEEF DRIPPINGS/BROTH!

One of my favorite dishes to use my tallow with is roasting butternut squash! I was able to get the tallow layer out in one piece this time, very difficult!

About the Broth:

When I am slow cooking short ribs, chuck roasts, stew meat, etc. I ALWAYS keep the leftover drippings from the dish.

I HIGHLY recommend saving all of your leftover meat drippings, especially slow cooked meals when you are yielding a lot of beneficial fatty juices. These slow cooked fatty deposits and even sometimes bone marrow (if slow cooking bone in meat), are so beneficial for you. It’s also a great alternative and money saver to store bought broth.

I store the drippings in a large wide mouth mason jar and either keep it in the fridge to use that week or store it in the freezer to use at a later time. As long as the fat layer on top remains in tact, in can stay fresh for a long while in the fridge (even a few weeks, just do a smell test before using if its been that long). It will stay good in the freezer for well up to a year or longer!

Equipment:

  • A butter knife

  • A spoon

  • A sealed glass container

  • Some cold water (running sink will do fine)

Ingredients:

  1. Remove your solidified broth/beef drippings from your fridge or freezer.

  2. With your knife, carefully cut into the top tallow layer that has formed above the broth layer. I like to cut lines making an X, so that there are 4-6 equal-ish pieces. Please see my instagram video for visual.*ADD LINK

  3. Now take your spoon and scoop each tallow piece out of the jar.

  4. Rinse each piece under running cold water to remove any broth so it is a clean piece of tallow.

  5. Place these pieces in an airtight glass container and store in the fridge or freezer.

    These pieces will stay fresh in the fridge for up to a month and the freezer for up to a year!

    Keep in mind that the broth under this tallow layer should be used within a few weeks, now that the sealed tallow layer is not keeping it fresh any longer.

    You can use these tallow pieces for anything you would use butter/ghee for! I add them to my cast iron and dutch oven before searing meat. You can add them to your pan before making fried eggs, ground hamburger, etc! Or my favorite (shown above), roasting butternut squash.
